There are many kinds (http://en.wikipedia.org/wiki/Vinegar#Types_of_vinegar) of vinegar.

wine, white, cider, balsamic to name a few.

What kind of vinegar do you use and for what culinery purpose (no I don't care about washing floors).

Mine answer tomorrow when I wake up

I use balsamic vinegar in vinegreatte-sauces, white whine vineger in most other types of cooking that cals for vinegar. Only exception is for a sicillian dish that I turned into a yummyy pasta-sauce, there I use red whine vinegar.

i dislike balsamic vinegars, but red wine gets used in so many things in our home. ditto, rice wine vinegar.

my wife uses cider vinegar for fish & chips.

Only stuff we use is the ridiculously expensive balsamic vinegar Mrs N buys for use on salads.

I've got red wine, balsamic, cider and white.

I use red wine for 99% of my uses. Balsamic is leftover from a diet that my wife was following. I do use it in a caper/vinegar sauce, but I don't do it that often. Cider was my wife's attempt to convert me. The white vinegar is for cleaning. I know I should get my mother's recipes for "sotto aceto"
(sorry, I only remember the italian wording right now) conserves. She has a couple of them that are excellent.

Since my father used to own a company that made red wine vinegar, I'm partial to a certain kind. To date, the best one that I've had (at regular shelf price) is made by Pastene. Most of other stuff is white vinegar with coloring. As if you can't tell.

I usually use red-wine vinegar for cooking purposes, sometimes white wine vinegar, depending on the dish; and balsamic on anything raw. We have a bottle of plain white vinegar around the house...I think it's the same one we bought on the first supermarket run we made after we got married.

I have a really great aged balsamic with fig that I love over sliced cheese.

I currently have cider, rice, balsamico and balsamico bianco.

I like white or cider vinegar on my french fries (or malt vinegar in a pinch).

The balsamico goes into salads.

I bought the balsamico bianco for a specific purpose that now escapes me.

The rice vinegar is used for California rolls.

The vast majority of the vinegar we use in my home is plain old white vinegar. We have some balsamic and red vinegar, but white is one we use for most nearly all the recipes.

Though most of the time, it's used to pickle hard boiled eggs.

Malt vinegar primarily

Apple cider vinegar with mother is also used for health potions

I don't cook much with vinegar, but it's a staple for salads. I don't do mayo based or creamy salad dressing. I usually go vinegar/oil/salt/pepper. Or I'll add dijon mustard for a change.

*twitch* I can't stomach the smell of it. but then my dad use to punish me by making me drink tablespoons of white or red wine vinegar.:vomit:

I've heard that mentioned by a lot of people recently...is that a common form of punishment?

I must say that's a bit alien to me. (especially since my mother _loves_ vinegar).

Castor oil or cod liver oil are much more common punishments. (Liquid Geritol also works well in this role.)

Let me assure you, they remain effective means of discipline. <shrug> And eliminate that whole "this is going to hurt me worse than it hurts you" problem. After all, the parents doing something *good* for the child by having them take the nutrient-rich, if vile, stuff.
