Potato salad.
How do YOU like it?

I had some today that was ...eh...edible if you were REALLY hungry (I was). It had dill, which can be a good thing in SMALL amounts. These were not small amounts.

I'm not a great lover of poatato salad, but I like it to resemble potatoes in creamy stuff rather than thick goo with bits of might-have-once-been-potatoes. A friend of mine makes really simple potato salad which is nothing more than new potatoes, mayonnaise, S&P and celery salt. It's yummy.

i like a certain measure of simplicity in potato salad but like just a hit of vinegar for a bit of bite. otherwise, i like the version marmalade's friend uses. :>

I like almost all potato salads. My kids though, like my most simple one. 1/2 and 1/2 diced potatoes and boiled eggs with just enough mayo to bind it all and a little salt and pepper and rosemary.

My potato salad, which is generally considered to be yummy, is baby new potatoes, mayonnaise and some finely chopped chives and that is it.

the mrs is making fried chicken for dinner, and potato salad will be the side. :>

i'm working from home today and i'm excited that i've already gotten to make two ron white references already. :D

I'm picky about potato salad because I detest the overuse of mayonaise (Personally, I don't use it at all...). Most of them are saturated in the shit.

To combat it at our many outdoor gatherings, I always bring this one:

Part 1:

1 lb. small white boiling potatoes
1 lb. small red boiling potatoes
2 tbsp good dry white wine
3 tbsp champagne vinegar
1/2 tsp dijon mustard
kosher salt
fresh ground black pepper
A good bit of olive oil
minced scallions (not much; two or three stalks)
fresh dill
fresh parsley
fresh basil


Boil potatoes in salted water until cooked through. Drain and cut in half or quarters (don't cut them first, or the innards will disintegrate too much in the boiling water). Toss with wine.

Combine vinegar, mustard, a little bit of salt and pepper, and slowly whisk in the olive oil. Add the vinaigrette to the potatoes. Add scallions, dill, parsley, basil, salt, and pepper--and toss.

Set aside....

Part 2:

1/2 lb fresh green beans, stems removed
1/2 cup capers
1 cup halved cherry tomatoes
1/2 cup diced red onion
1/2 cup black olives (pitted)
6 hard boiled eggs, peeled and quartered


Blanch the green beans in boiling water (3-5 minutes, tops). Put in ice water to stop cooking, then drain. Dump green beans and rest of ingredients into bowl of potato salad. Toss together.


It's great either chilled, or at room temperature.

Home made potato salad with herbs

sliced tomatoes and avocado, seasoned

String cheese.

I dislike potato salad, so my favorite is whatever is not on my plate.

It's probably the only way that I don't like to eat potatoes.

I like potato salad but only eat it once in a blue moon, it's just not something my family is big on.

The closest thing to it that I eat on a near regular basis is my mother's ham salad which does contain some potatoes. Essentially it's just lettuce, ham cubes, potatoes, mayonnaise, mustard and seasonnings. Change the lettuce and ham to eggs and I have a good imitation of a potato salad.

Growing up the only way I would eat potato salad is (from memory):
boiled potatoes (red and white) (al dente) Cut in quarters and seasoned like a regular salad: Oil, Vinegar (red wine), chopped fresh green onions, salt & pepper.

So somewhat similar to Cotsboe's version.

Like I had mentioned before, I never had mayo at home.

I've had the "regular" kind with mayo, never did much for me.
