for those of you who've used a knife-sharpening service, what kind of prices should i expect to pay? assume an 8" chef's knife if that's a meaningful variable.

The one we have home is one of those "shear metal off the blade" kind of sharpeners and they do a nice job for home cooking. I don't know if professionals would be caught dead with them or not.

One or two strokes and the knife is sharp enough to slice through a tomato under its own weight by just sliding it back and forth.

The one we got was from Wal-Mart for about 10$, in the kitchen section. Don't know how long it will last really. Just watch out for where the metal fillings fall out.

I also have to admit that sometime, just for fun, I get out my fine waterstone and just spend an hour trying to get the sharpest, smoothest edge possible, way beyond what is needed, on a knife. I'm talking peach fuzz shaving sharp here.

What we'd need at my place is a honing steel. Those smooth metal rods that only serve to straighten out that edge that has become wavy and or folded.

Dunno. I haven't paid for sharpening ever. I get my father to do it they are usually good until I get to see him again. (3-4 months).

If he's not able to do it himself, I'll get myself a table top grinder and do it myself.

I'm not helpful, I'm afraid.

No clue. I think I mentioned in another thread that when my stainless knives go dull or whatnot, they get tossed or stuck on the boat for fish cleaning. I buy cheap ones because we (and by "we", I mean the other person in my household over the age of one...) destroy and neglect them.

Cutco comes to the house and does it for free, of course they also try to sell you new knives to go with your set.
