What are your favorite leafy "greens"?

heh...kudos on the swamp thing poll options, marmalade. :D

i'm a big fan of spinach, but for raw greens, i'm a massive fan of arugula. i like the peppery bite.

I loves me spinach! I grew up on the canned variety, just like Popeye.

I don't think I've tried any of the others types of greens. Or if I have I'm not aware of it.

Unfortunately we just don't cook spinach in my house. Oh well.

I love spinach! cooked and raw, especially a spinach salad with tomatoes, cucumbers, and poppy seed dressing

With my unfamiliarity with most leafy greens, I had to fall back to spinach.

I like spinach in salad form, but the frozen spinach my mother uses for her lasagna makes me choke.

I like them all. Collard Green is at the bottom, simply because I don't exactly know how to prepare them properly.

swiss shard, spinach, mustard green stand above the rest.

Don't do much bok choi, but I still enjoy eating them.

My great-grandmother could walk through our yard when I was a child and harvest a feast. Mostly it was dock and poke.

One memorable time my parents had me follow her around in hopes of me learning her secrets. Next time out, after cooking a huge pot of greens, we all discovered that she hadn't taught me to distinguish between regular dock and bitter dock.

Darn it, I meant to include poke salat in the poll. Never heard of dock, though.

My favorite is spinach. Swiss chard and baby bok choi come next. I'll eat collards to be polite, but won't touch mustard greens.

The plant I'm familiar with looks like the green leaves in this picture

but never grew tall or had seeds like in the other picture on the same page. (Or it could be that I just didn't recognize it as being the same plant after it hit that period in its maturity. Its not like I stopped for months to watch them grow.)

Wikipedia lists a lot of varieties of dock but very few pictures. http://en.wikipedia.org/wiki/Rumex

These days I prefer spinach since I can't keep from poisoning myself with wild greens. I detest mustard greens.

I like them all but have a preference for bok choi. I make a tasty chinese salad from those.

Spinach all the way. Put it in everything: Pizza, Sandwiches, Chili, stew, spaghetti. Yeah. All kinds of things. It's good stuff, great flavor, and good for health.

Also, I recall enjoying something called slickweed, but I cant find that online. Hmmm

Bok choi is alright, I never knew it was part of the green family. Nor did I know swiss chard was part of the green family either and am not to fond of it (but Ive only eaten it raw)

My mental definition of greens is 'Things generally slowly cooked with bacon'

I do not like spinach raw, and am rather not fond of bok choi raw but its better than spinach. Either can be made palatable by drowning in dipping sauce

Turnip greens, kale, collards, and mustard greens Ive never eaten raw, but I dont think Id enjoy them that way

I once tried eating dandelions from the yard but was not impressed

There's another one that I forgot (and kale). Some people like beet tops too.

I think collards, kale, and bok choi are all somewhat related to cabbage, while spinach, chard, turnip/beet tops, and yard weeds are not. But they're all green and leafy.

Me? I'm a fan of a crispy, green cabbage but I also enjoy spinach & some other random greens in salads.
