What are some of your favorite cookbooks? My answers later this evening when I get back home.

Spice & Spirit
The Barbecue Bible
The Joy of Cooking
The Settlement Cookbook
In all of these cases, the cookbook provides a treasure trove of information, the recipes work, and they are backed up by explanations, historical data, and, in some cases, my mother and grandmothers' notes.

The Fanny Farmer Cookbook
Chevy's Fresh Mex Cookbook (even though I haven't made nearly enough recipes out of it).
But mainly our own little cookbooks/notebooks in which my wife and I have written our tried-and-true recipes.

Fanny Farmer is my favorite. But I've got several niche ones that are fun.

Jehane Benoit's Encyclopedia of canadian cooking is the reference book that me and my family uses in addition to all the recipes we pick up over the years.
